PERFECT GRAIN FREE GRAVY EVERY SINGLE TIME
¼ lb. Shiitake Mushrooms washed, dried and chopped coarsely (for brown, earthy gravy for beef or chicken or cream of mushroom soup)
¼ lb. Oyster Mushrooms washed, dried & chopped coarsely (for white, light gravy for seafood and poultry)
1 large onion chopped coarsely
¼ cup of ghee
2 cups bone broth (beef or chicken) (1 cup chicken and 1 cup white wine for seafood sauce)
Salt and Pepper to taste
Optional- peeled and roasted garlic bulb (Yes- all the cloves from an entire bulb of garlic)
In a cast iron pan sauté the onions in the ghee. Add the mushrooms once the onions are almost browned.
Pour entire mixture into a Vitamix and then add roasted garlic, 1 cup broth and salt & black pepper (to taste). Turn on the Vitamix on high until you have a smooth mushroom garlic paste.
FOR WHITE SAUCE:
In cast iron pan melt a tablespoon of butter, add 1 cup mushroom paste, 1 cup wine and blend well.
Add chicken broth to get the sauce to your desired thinness. Check for salt and pepper once more.
FOR BROWN GRAVY:
Put mushroom paste into a sauce pan and thin using broth to desired thinness.
Bring to a simmer on medium/low heat. Check for salt and pepper once more.FOR CREAM OF MUSHROOM SOUP:
Put mushroom paste into a sauce pan and add 2 cups of diced shiitake mushrooms.
Now thin using broth to desired thinness.
Bring to a simmer on medium/low heat. Check for salt and pepper once more.
