Paleo-Nightshade Free Chili

1 lb. Mob Grazed Ground Beef Sirloin

½ pound mushrooms, diced

¼ cup ghee or coconut oil 

1 extra-large red onion diced finely

1 whole hand of garlic peeled and minced

1 thumbs worth of peeled and minced ginger root

1 pinkies worth of peeled and minced turmeric root

1 heaping tablespoon garam masala (cover the meat well)

1 heaping teaspoon REAL SALT- or salt to taste

2 beets from your produce box, washed, peeled and blended in ¾ cup beef broth in a Vitamix or blending device 

**you can use a full-size butternut squash or 2-3 acorn squashes that you peel & par broil in the oven (peel and broil for 15 minutes) then blend in the broth instead of the beets. 

***I will often add the roasted squashes in the chili even without blending and let them slow cook down with the meat.

Heat your coconut oil in a skillet and add the onions to brown, add the mushrooms and cook until they begin to shrink then add ground beef. Add all the seasonings and mix well into the beef.  Pour in the beet mixture and stir in well. Now transfer this into a crock pot and let it slow cook on LOW while you work.  Come home to an amazing smelling home with dinner ready for all to enjoy!  We serve this over sautéed cauliflower, in a bowl on its own or to top baked sweet potatoes!
