INGREDIENTS:
1 lb porkstir fry
2 TBLSP pork lard
1/2 container sliced fresh mushrooms (minced if the family doesn't like mushroom texture. YOU CAN ALSO simply add 1/4 cup of my mushroom gravy here -see recipe for grain free gravy!)
1 large onion sliced
2 cups any squash you like, thinly sliced
2 TBLSP minced ginger root
1 TBLSP garlic, minced>br> 1 cup bone broth
1 TBLSP tamarind paste
2 TBLSP Coconut Secrets Coconut Aminos

METHOD
Brown pork strips in lard in large cast iron skillet over medium-high heat.
Push meat to side of skillet
Add mushrooms (slices), onions, squash, ginger and garlic; stir-fry about 3 minutes
Combine broth, (mushroom gravy if you skipped sliced), tamarind paste & coconut aminos
Add to skillet and simmer on low covered for 10 minutes.

Serve over rice, cauliflower, baked sweet potato or IN A BOWL ON ITS OWN! It is a nice meal on its own - especially if you DOUBLE the pork!
