Medicinal Pate (to be used when prescribed by Niti The Farmacist)



  • Equal parts organs (heart, liver, sweetbreads) and then whatever this looks like in volume, we need that same amount of jowl so the jowl is 50% of the whole volume of organs
  • Preheat oven to 450 degrees and you will use the lowest rack position for this
  • Slice jowl and fill cast iron pan big enough to add the organs once you have cooked the fat out of the jowl
  • Put jowl in the oven and bake for 12 minutes
  • Slice all organs or chop into equal size squares (consistent cut = consistent cook)
  • Remove jowl, SCRAPE the bottom of the pan with a sharp metal spatula to loosen all the meaty chunks that are stuck on the bottom of the pan (DO A GOOD SCRAPING JOB!)
  • Place all the jowl in blender with enough bone broth to cover the blades and flash into a puree
  • Add all organs to jowl fat in cast iron pan that was properly scraped and return the pan to the oven for another 12 minutes
  • Empty the pan into the blender with the jowl and broth mixture
  • Scrape the pan well and use silicon spatula to catch all the fat and rendering crunchies from the pan and fill blender
  • ADD real salt to taste
  • Puree into a paste then jar
